Once you have a full stack of a Provisioning ingredient, you probably don't need to pick up more unless it's something you're actually going to use for writs or the food/drink you use. You're unlikely to need more than one stack of lockpicks. You probably only need one type of food or drink (probably Crusty Bread unless you can craft something more useful), don't even pick up any others laying around.
If you can keep your materials and solvents passives at the one that matches your character level, all the materials you find will be the same instead of finding 50% of one and 50% of another. You can buy three other coffers and four chests for a total of 360 slots, although if you're relying on the free inn rooms for housing you have to place and remove the coffers/chests to access all those slots. You should already have 30 slots of housing storage in the form of the Fortified Storage Coffer you got as a level-up reward at level 18.
